Where can I take my mom?

I’m considering a mom and daughter trip and looking for ideas. She’s in her 60s and has some hip issues so we can’t be walking all day. The other issue is that she’s somewhat inflexible when it comes to travel. Doesn’t like crowds, doesn’t care for history or museums. She likes nature and solitude, but only really goes to the Caribbean. Time of year and budget is flexible, I’m just low on ideas.
